Kyndra: Well, it was very hard. When I said I was leaving ASU to go to culinary school a lot of people were like, "Why would you do that? Just finish your four years and then go," but I wanted to get my life started. I knew what I wanted to do. I took the leap of faith and I did it and I didn't look back.

Kyndra: All my good friends call me, "Kyn."

Delo: Kyn?

Kyndra: Yeah.

Delo: They just want to dra draw off.

Kyndra: I guess it's too hard for them to say. I don't know.

Delo: Oh my goodness. Kyndra Kelly, Kyndra Claire Kelly.

Kyndra: Yeah, Kyndra Claire is my online name, but my actual name is Kyndra Kelly.

Delo: Very cool.

Kyndra: Yeah.

Delo: And you originated from what city, what state? Where were you born?

Kyndra: I was born in Minnesota, actually. A lot of people don't know that about me. My whole family lived in Minnesota and then we migrated South when I was about seven.

Delo: Okay.

Kyndra: We came to Arizona and I've lived here ever since. I live in Scottsdale.

Delo: You live in Scottsdale and you've lived there ever since?

Kyndra: Yep.

Delo: And tell me about your family.

Kyndra: Awesome. I'm super close to all of them. My grandparents are here. It's great.

Delo: Very tight knit-

Kyndra: I'm very lucky, yes.

Delo: ... close family. That's-

Kyndra: Mm-hmm (affirmative). And plus, my mom is my partner in crime. She does everything with me.

Delo: Very relatable us talking of mic and off camera, when you saw my dad come into the video, you'd be, like "Family business." You love it. You get it. Yeah.

Kyndra: Yep, totally approve of that.

Delo: That is awesome. And so, as a little girl, before any and all of this started coming into your mindset of, "Hey, I want to cook. I want to do all this," what was some of your favorite superhero moments or what did you want to do? Did you want to be a firewoman? Did you want to be, I don't know, a-

Kyndra: A firewoman. No, I was never that heroic, but I did know from a very young age that I wanted to cook. I would always be watching the Cooking Channel, Food Network. Those were my idols. When I graduated high school, I went to ASU. I originally was actually in film because I knew that I wanted to do something with food videos, food styling, whatever, but I hated every second of it.

Delo: You were just not into it.

Kyndra: It's not what I wanted to do. I wanted to be making the food. I didn't want to be behind the scenes. I transferred to Le Cordon Bleu and I went to culinary school and it was the best decision I ever made.

Delo: Tell me about that experience. We don't hear a lot of those experiences coming out of culinary school anymore. It seems to be few and far-

Kyndra: I know, yeah.

Delo: ... between. Tell me about that experience.

Kyndra: Well, it was very hard. When I said I was leaving ASU go to culinary school, a lot of people were like, "Why would you do that? Just finish your four years and then go," but I wanted to get my life started. I knew what I wanted to do. I took the leap of faith and I did it and I didn't look back and it was awesome. I made so many great friends at culinary school. It was awesome. I learned so much.

Delo: Did you have something in mind or in sight when you were going there that, "I'm going to either own a restaurant," or "I'm going to work at a high class profile restaurant," or was it always, "I'm going to start Kyndra's Kitchen and do my own?"

Kyndra: It was both. I was going to see where life took me. Graduating culinary school, I worked in a wedding cake shop for about two years, which was awesome, but that also made me realize that wasn't what I wanted to do. It was awesome. It was great. I learned a ton, but it's all about life experiences and it wasn't what I wanted to do. I wanted to do more recipe developing, food styling, that kind of stuff, food videos. And so, that's what I did. I just jumped right into it. I had no idea what I was doing.

Delo: There's a real science behind it, isn't there?

Kyndra: Oh, yeah.

Delo: How to create the food, the ingredients that go with it, all the experimentation you've probably done over the years.

Kyndra: Yeah, it's all been trial and error and I've learned so much over the years, but it's been great.

Delo: Do you remember the biggest pile of crap you ever made in school that they're just like, "Oh my God." I mean, do you remember? What was the worst thing you've ever made?

Kyndra: Well, I'll tell you one thing. We had this chocolate... I had to do a chocolate class crosstalk doing this chocolate sculpture and it was awesome because my degree is actually in pastry and baking. I had a lot of chocolate classes, stuff like that. And I didn't temper my chocolate correctly, which has to do with heating and cooling it off and reheating, and it's a pain in the ass, I'll tell you that. But I didn't temperate correctly, which means it basically didn't harden the right way and I was putting my chocolate sculpture together. I mean, this thing is tall.

Delo: 3 feet tall? Yeah.

Kyndra: Yeah, and it just crumbled. It just absolutely crumbled, all my hard work. I've been working on it for probably six weeks.

Delo: Oh no, and it just... Did you get a grade on that thing or-

Kyndra: Yes. Yes, that was a grade. Although my teacher, he felt pity.

Delo: Yeah, so you got a C?

Kyndra: I got a C. It wasn't bad.

Delo: In participation, yeah.

Kyndra: Yeah.

Delo: You got all the way up to the very end and then it just crumbled?

Kyndra: Mm-hmm (affirmative). It was horrible.

Delo: Well, it sounds like all the rest of schooling and then you're venturing further on didn't crumble. You've really built up this nice little business and-

Kyndra: Yeah, I like to think so and I enjoy it so much.

Delo: Yeah. Going back to your family now, you've mentioned and talked about how your mom, especially, has been an intricate part, your partner in crime, that sort of thing. Tell us a little bit about that. What does family mean to you? How does that-

Kyndra: Everything. I would not be anywhere near where I am today without them. I mean, my mom is actually my photographer. I learned everything about photography from her.

Delo: Awesome.

Kyndra: She takes the majority of my pictures of me. I do the pictures of the food but yeah, she's my little partner in crime and she's the one that I create all the recipes with. I mean, she helps me so much. I say that I do it all on my own, but that's not true. I do it with my mom. She's the only person I trust and I'm sure you get that.

Delo: Oh, 100%. I wouldn't do this with anybody else other than my dad, and then watching him and being molded after that. If you can't trust family, who can you trust?

Kyndra: Exactly. I have problem delegating. I'm really bad at giving work to other people. If it's someone I can trust like her though, I can.

Delo: You can just let it go and-

Kyndra: You got it.

Delo: ... do your thing? Do what you're... Yeah. No, that completely makes sense as well. As you move on and you worked for a wedding cake place, did you work at any other restaurants or any other establishment?

Kyndra: Yeah, I did a little bit of catering for about a year. But other than that, it's all been just Kyndra's Kitchen.

Delo: That's great. That's great. And you've been doing Kyndra's Kitchen, little tongue twister.-

Kyndra: Yeah, you got it.

Delo: ... how long now?

Kyndra: About two and a half, three years, I would say.

Delo: Okay. It goes by fast.

Kyndra: Oh yeah. It's been awesome.

Delo: Really fast.

Kyndra: It's been a great experience.

Delo: What has been your key moment where something had clicked, where you started cooking and I assume you had started a YouTube channel right away?

Kyndra: Mm-hmm (affirmative). That was actually the first thing I did. I started the YouTube channel. I originally was like, "I'm not getting into Instagram, not doing it." But the Instagram took off more than the YouTube did so I focused more on that aspect of things because I mean, the YouTube channel just took up so much time. I would spend all day filming and then I would stay up night editing and then it'd be 4:00 AM and I'd be like, "Oh, I have to be up in three hours." It was hard because I love editing. Filming and editing, I loved it. That's originally why I went to ASU for film, but I realized that I can't really do that all by myself. It's a lot.

Delo: It's really interesting, a person of your personality that has all these followers, is building a base and we're looking at cameras, you liked it. Obviously, you're not shy or bashful to be on the camera thing. But again, talking prior to this, you're an introvert.

Kyndra: Yeah.

Delo: Yeah. It's like when Kyndra's Kitchen is not on, you're doing-

Kyndra: I'm off.

Delo: ... your thing. You're you're off. Yeah. Yeah. Tell us a little bit about just you personally, your off time. I know you like dogs. You like yoga. What's some really cool shit you like to do?

Kyndra: See, this is going to catch you by surprise. I'm actually a huge gamer.

Delo: Okay.

Kyndra: Yeah.

Delo: That's pretty cool.

Kyndra: That's what I like to do to unwind. When I have these events during the day and I get home, I throw the hair up, put the PJ's on and I game.

Delo: Minecraft or-

Kyndra: No, more like Call of Duty, Fortnite.

Delo: Oh, no kidding.

Kyndra: Yeah. I was really into those games.

Delo: Okay, and you have a secret handle that you use or-

Kyndra: Yeah, I'm not going to tell you what it is.

Delo: No, that's okay. I don't need to know. But can you tell me, is it baking with sugar, with knives, or I don't know.

Kyndra: Close.

Delo: Pretty close

Kyndra: Close. Baking with flour, actually.

Delo: Ahh.

Kyndra: Yep.

Delo: Very cool. That's awesome. You're a gamer.

Kyndra: Yeah, it's a good time. Yeah. I mean, with all these social events and things, it's hard being an introvert because you work yourself up so much, then you get home and you're exhausted.

Delo: You just want to let your mind just escape-

Kyndra: Exactly.

Delo: ... and that's where you're able to do that.

Kyndra: Yeah, so I either game or I binge watch. I just finished The Witcher, which was awesome.

Delo: Oh, really?

Kyndra: It's a great show.

Delo: Is that Netflix or-

Kyndra: Netflix, yeah.

Delo: Okay. Do you watch cooking shows on Netflix?

Kyndra: Yeah, I do. I've seen most of the ones on Netflix and-

Delo: Doesn't feel like work?

Kyndra: No. I mean, sometimes because I sit there and I'm getting ideas and I try and jot stuff down, but at night when I get home, I try and just turn it off.

Delo: You're just trying to chill it out. Yeah. Going back to your cooking style, and what I really enjoyed about reading about you and looking on your website, is the fact that, well, A, you call yourself, correct me if I'm wrong, "A balanced foodie."

Kyndra: Yes. Yes.

Delo: Okay. Yeah. Let's talk about that. What's the definition of a balanced foodie in your mind?

Kyndra: Mm-hmm (affirmative). Well, in my mind, it's someone who eats with intention, moderation. Yeah, you can eat a tub of ice cream, but don't eat a tub of ice cream every night. Something like that. And when I'm at home, I try and cook with the best ingredients possible. I eat as healthy as I possibly can so that when I go out and indulge, it's not a big deal.

Delo: It's a balancing act.

Kyndra: Exactly.

Delo: Yeah.

Kyndra: It's-

Delo: Tell us a little bit about those ingredients. There's so many, we call them diets, fad diets, the next best thing, this and that. I mean, you remember the days, you may or may not remember the days, but I'm sure you've heard of Atkins.

Kyndra: Oh, yeah. Oh, yeah.

Delo: Now we've got the all meat diet and now you got Paleo and now you got crypto. No, that's a currency but anyways.

Kyndra: Yeah, yeah, yeah.

Delo: At the end of the day, are you a firm believer in the aspect that a whole food is a whole food and if it's clean, organic, grass-fed, grass-finished, maybe, I mean that sort of thing it's-

Kyndra: Yes.

Delo: ... good?

Kyndra: Yes.

Delo: Yeah. What are some of your favorites?

Kyndra: I 100% agree with that. I mean, when I'm at home, I always try and buy organic, all cage-free eggs, the grass-fed meat, non-GMO stuff. I mean, if you eat that way, it's hard though because like we were talking earlier, then you go out to restaurants, you know they're not necessarily buying stuff like that.

Delo: Right.

Kyndra: It's hard. It's a balancing act.

Delo: They got to make money.

Kyndra: Exactly.

Delo: Yeah, and most people don't-

Kyndra: And I get it.

Delo: ... notice. Yeah.

Kyndra: Yeah, I get it. And most people don't notice because that's not really a thing that most people look for because it is more expensive to eat that way. And so, it's hard, but-

Delo: Sometimes convenience over health.

Kyndra: Exactly, yeah.

Delo: Which nothing wrong with that.

Kyndra: No, I get that.

Delo: It's just people's priority and yeah.

Kyndra: But I have now eaten that way for so long that I've realized how much better I feel eating that way. And so, it's hard to go back.

Delo: Do you make your dogs their own dog food?

Kyndra: Oh, yeah.

Delo: Oh, hell yeah.

Kyndra: Hell yeah.

Delo: My wife and I just started doing that the last four weeks.

Kyndra: We do grass-fed beef most of the time but sometimes chicken. Depends.

Delo: You have one dog or two?

Kyndra: I have one now.

Delo: You have one now.

Kyndra: My golden passed away a few months.

Delo: I'm sorry.

Kyndra: It's fine.

Delo: That's the worst.

Kyndra: But I will say, we have to buy a lot less dog food now.

Delo: Geez. There's always a bright side to a dying dog, maybe or maybe not.

Kyndra: All right, PETA.

Delo: And I have my dogs on my shoes, as I-

Kyndra: It was so cute.

Delo: ... showed you earlier. That's great. Okay, obviously business school wasn't all that it was cracked up to be and film and all that sort of thing. You go, you do everything, and here you are two and a half years, going on three years into it. How did these magazines and some of these other, let's just say news channels and all, how did they find out about you? What got you on the radar?

Kyndra: I don't know. That's a good question. I did have a friend who didn't work for Your Life Arizona, which was the first news place I ever went on. I think she was on it and she said, "Hey, you'd be great on the show. Let me tell you about them." And I was like, "Yeah, I'd be down. Why not?" I went on. I think the first segment I did was a Christmas segment for them. I think we did some Christmas cookies, but it was awesome. I mean, I loved it. You get such an adrenaline rush-

Delo: Totally.

Kyndra: ... when they turn it on and you're like-

Delo: You're like, "Whoa, I'm in front of all these people and part of the team."

Kyndra: It's a good time. Just a couple of months ago, I did go Good Morning, Arizona. I don't know if you saw that.

Delo: Yeah, I did.

Kyndra: I did Popeye's chicken throwdown, which was fun.

Delo: Wow.

Kyndra: I won, by the way. I don't want to brag-

Delo: But you won.

Kyndra: ... but I did win.

Delo: You can make a mean Popeye's chicken-

Kyndra: I can, apparently.

Delo: ... is that what you're saying?

Kyndra: Yes.

Delo: Yeah, there'd be a long line for that.

Kyndra: Yep.

Delo: That chicken sandwich, I don't know. Tell the audience, the people watching, about your J.R.R. Tolkien quote.

Kyndra: Well, I told you I was a big gamer. I'm just a big nerd in general.

Delo: Yeah, Lord of the Rings?

Kyndra: I mean, I can quote the entire Lord of the Rings series. I mean, trilogy start to finish

Delo: Sméagol-

Kyndra: No joke,

Delo: ... was that one of the guys?

Kyndra: ... I can do a Sméagol impression. I'm not going to do it for you though.

Delo: Are you sure? What if I use the Jedi mind trick? Can I get that done?

Kyndra: Maybe another day.

Delo: Okay, maybe.

Kyndra: No, but the quote, "If more of us valued food and song and cheer above hoarded gold, the world would be a merrier world." I like to go off that because it basically just means if more of us valued our friends and family and just spending quality time with one another instead of either stepping on people's toes to get where you want to be or all about money, I just feel the world would be a merrier world. I think he hit the nail right on the head with that quote.

Delo: There's a lot of energy play into what you say and a lot of good vibe and energy that I get from you in that aspect. And also, to the fact when you talk about eating with intention, I don't think a lot of people, I don't really think they think about that. What is the intention? Why this meal that's in front of us is stuff that fuels our body-

Kyndra: Why are you eating it?

Delo: ... that lets us... Why are we doing this? Yeah. And a lot of times people are just mindlessly, just grabbing whatever they can, whenever they can.

Kyndra: Which I get.

Delo: Same here.

Kyndra: I can't say I haven't done that.

Delo: Oh, guilty as charged, more times than not.

Kyndra: Sometimes I'm like, "Am I bored or do I just want to eat? I'm not sure. Am I bored and I want to eat? I don't know."

Delo: And sometimes you eat and you don't even realize that you just ate. You're like, "Whoa. That just went down."

Kyndra: Yeah, which is another thing, the whole living and eating with intention thing, that being in the present moment that won't happen.

Delo: No.

Kyndra: If you try and live in the present moment, you will savor every bite of food.

Delo: I completely agree. That's funny. I don't know if you know, we've created a brand. Actually, I just gave you the shirt so you kind of know. We're creating a branding called Healthy Hospitality and within that, and again, it's something that intrigued reading about what you do and using the wholesome ingredients and this and that.

Delo: What do you think Healthy Hospitality, what meaning does that have towards you and how you feel about it in the restaurant industry? How can the restaurant industry, in your opinion, just change 10% based on what you see and how you create meals and how could they possibly, whether it be putting one really wholesome meal on their menu so people like us have a choice or other... That's a little bit. What does it mean to you?

Kyndra: I mean, my big thing's meat. I know a lot of people are going vegan nowadays. I couldn't. I mean, I love my meat. I love to cook with meat. I mean, it's... But for me, when I'm cooking at home, I told you, it's all grass-fed, non-GMO so I feel good about eating it. And I know a lot of burger places have a grass-fed option nowadays, which I think is great. I always get it. But I went to a restaurant the other day where they had removed that option because I guess not enough people-

Delo: We'll talk off camera about that one. Yeah.

Kyndra: ... which is sad, that not enough people... It was more expensive so not enough people wanted to buy it, obviously, which it's just sad because if you only knew how much better that meat was for you, then I think that-

Delo: There's a big following on the vegan lifestyle.

Kyndra: Yes.

Delo: I mean, one of the things that had, I think, put a fire under my ass a while back... I went vegan for a whole year.

Kyndra: Really?

Delo: A year.

Kyndra: Really?

Delo: And Rich Roll, I mean, I don't know if you've heard of him. He's got a huge podcast, this and that. And so, I had listened and I get it. I understand-

Kyndra: I do too. Yeah, 100%

Delo: ... the whole meaning of what goes on, this and that. But I also, what I did is I did more of a Tim Ferriss approach to this where when I experimented doing veganism, I took blood samples every three months of what was going on. Personally, I found myself less healthy without having at least a little bit of the nutrients that's contained in a healthier meat.

Kyndra: Well, exactly. Like I said, a balanced foodie. You don't have to eat meat every day, but if you cut out an entire food group like that, it's just not going to be good.

Delo: Yeah, you're absolutely right. And it seems a lot of these restaurants nowadays are really trying to find their groove. They're either going the full spectrum, all the way healthy, or they're that place where you go-

Kyndra: Exactly.

Delo: ... to just get away. And it's like, there's some that are middle ground, but at least I hope to see more of these over the top, healthier options-

Kyndra: I agree.

Delo: ... that they may be able to do.

Kyndra: Yeah, and like I said, it's all about balance. I mean, I don't eat a lot of meat, but I do it more as a health aspect, like you were saying.

Delo: Yeah. Let's talk about treats because I know you like to bake.

Kyndra: Yeah.

Delo: If I'm not being... Here's my biggest setback and I'm going to selfishly ask this question because it's my podcast and I can.

Kyndra: I love that.

Delo: I really like sugar. I'm addicted to it.

Kyndra: Yeah, don't we all?

Delo: It's just one of those things. Now, if you are able to do a treat for somebody that has an issue with sugar, doesn't need, all that sort of thing. I mean, what's something that you put together for people like that?

Kyndra: Well, I put it together for myself probably once a week-

Delo: Cool.

Kyndra: ... at least, because I'm in the same boat. I love sugar. I'm constantly cooking and baking all this stuff. And as much as I do... I try it all, and as much as I want to sit down and just eat the whole thing, I know that I can't. It's not good for you.

Delo: It's willpower.

Kyndra: Yeah, so I do this healthy brownie skillet. It's free of all refined sugar. It's sweetened with maple syrup.

Delo: Nice.

Kyndra: It's got almond flour as the flour and I use these sugar-free chocolate chips in it, although it's not necessary. And it's truly the most decadent thing you've ever tasted in your life.

Delo: And this is all something people can find on your website, right?

Kyndra: Oh, yeah. Oh, yeah.

Delo: For sure.

Kyndra: For sure.

Delo: That's cool.

Kyndra: I mean, I do it in these little cast iron skillets to make it fun and you can put a scoop of ice cream on top of it. You don't need it.

Delo: Yeah, or coconut ice cream or-

Kyndra: Exactly.

Delo: ... yeah, stuff like that.

Kyndra: Yeah, I have a couple of healthy treats like that, that I make for myself because I do love the sweets. And I actually recently found out, probably about two months ago, that I am relatively gluten sensitive.

Delo: Really?

Kyndra: Yes, which was very sad for me to find out.

Delo: How'd you find that out?

Kyndra: I did a bunch of blood tests and they found out-

Delo: Just through a natural path or something like that?

Kyndra: Yeah, through natural path. Yeah, and she told me that I should probably stop eating gluten for the rest of my life. And I was like, "Oh, hell no."

Delo: Yeah, that's not going to happen. Yeah, right.

Kyndra: But I have been limiting a bit more so I've been working with the gluten-free flours, the almond flours, oat flours, a lot more now, which I can say that I have felt better eliminating gluten, but like I said, I mean, this life that I live, I just can't-

Delo: You're a foodie. I mean, yeah.

Kyndra: Yeah. We got to make sacrifices for those things that we love sometimes.

Delo: 100%. And it is interesting that a lot of these health issues that people are having with their food are really coming to light within the last five years.

Kyndra: Right, and I was talking to my uncle the other day and he was telling me a story about a friend of his who has celiac disease and how when she went overseas, she could eat all the bread in the world.

Delo: I hear that story so many times more than not and I could be completely wrong on this, but from what I am hearing is that over there, they ban certain substances that are able to go into the food content.

Kyndra: Right. Why don't we do that?

Delo: I know. Well, probably a number of reasons we don't want to get into or else the black car's going to pull up.

Kyndra: Right, yeah.

Delo: But yeah, it's a little crazy just to think that those little bit of changes could make bread healthier for us.

Kyndra: I know, right? And like I said, when I do eat gluten, I try and buy the healthiest bread I can, the sprouted. But it's still hard because you know that it's probably not the best for you, but I would love to go over there and see if I still have the same problems.

Delo: Have you never been to Europe?

Kyndra: No. No.

Delo: Never traveled in that aspect?

Kyndra: Mm-mm (negative).

Delo: Yeah. I think you're due for a trip, for sure.

Kyndra: Oh, definitely.

Delo: It's market research, right?

Kyndra: Just to eat the bread and pasta, for sure.

Delo: And podcasts or blog it, vlog it, all that stuff. For sure.

Kyndra: Absolutely.

Delo: You like rice over quinoa, correct? Is that a better...?

Kyndra: That's a hard one. Yeah, probably. I would have to say so. I'll eat them both. I always have rice in my fridge. I just love to make it. I love to eat it. It's a comfort food for me. When I was sick, my mom used to make me rice with a shit ton of butter and turmeric.

Delo: That was good.

Kyndra: Mm-hmm (affirmative).

Delo: God.

Kyndra: Mm-hmm (affirmative).

Delo: Yeah, it seems like meals that are really well put together have some sort of a, I would say healthier carb, instead of necessarily French fries or anything-

Kyndra: I agree.

Delo: ... but rice, quinoa, that sort of thing. That's awesome. What are some trends that you are seeing food-wise that are coming up that... I don't know if you pay attention to those trends or if you do any recipes based on what people... There's so many new... Cacao butter or coconuts are big now.

Kyndra: Yeah, the coconut thing is huge and I have experimented with a lot of coconut sweeteners, coconut flour. Coconut flour is a pain in the butt to work with.

Delo: Is it?

Kyndra: I'll tell you that. Yeah, it's very absorbent.

Delo: Yeah, and-

Kyndra: You could put a whole bunch of liquid in there and it's just... It's hard.

Delo: It's supposed to be really good for you though.

Kyndra: Yeah, absolutely. And the cacaos, I've done quite a bit with and then like I said, the whole gluten-free thing, I think that will always be a trend.

Delo: Yeah, for sure.

Kyndra: I don't even know if you can consider it a trend at this point.

Delo: Well, they have whole aisles in grocery stores that are gluten-free or Paleo or any of that sort of stuff.

Kyndra: Right, and when I found out about this whole gluten-free thing, I did my research and found out about all that stuff and it's incredible the things they make gluten-free now.

Delo: Yeah. Do you find that most restaurants utilize ingredients that have been known to not be quite as health conscious due to the fact that the price points are there?

Kyndra: Yeah.

Delo: Yeah?

Kyndra: 100%. And that's the other thing, when I found out about how the gluten thing, I realize now, what trouble some people probably have going to restaurants with food restrictions because I mean, I've been to multiple restaurants since I found out that don't even label if they have gluten-free or not.

Delo: Right.

Kyndra: Yeah, and I'll ask the server. I don't want to beat that person but I asked the server, I'm like, "What are your gluten free options?" I mean, he said, "We don't have any." And I was like-

Delo: Okay.

Kyndra: ... I mean, I know that's not true. You just don't want to tell me but-

Delo: Right, it's lettuce.

Kyndra: ... I'll let it slide.

Delo: Yeah, it's lettuce. A little bit more about your business now. You obviously have a cookbook, right?

Kyndra: Mm-hmm (affirmative). I'm working on it.

Delo: You're working on that?

Kyndra: Yeah.

Delo: That's not done quite yet?

Kyndra: It's very close. I'm hoping fall.

Delo: And then you have... Do you do stuff with Bob's Red Mill? Is that correct?

Kyndra: Yeah. I work with a couple of different companies. Bob's Red Mill is one of them. They're the grain company. They're awesome. They do all organic stuff so I highly approve of them.

Delo: Awesome.

Kyndra: This is not an ad.

Delo: No, that's totally fine. Any of your affiliates that you utilize or want to talk about, I think it's great for people to know-

Kyndra: Mm-hmm (affirmative). For sure.

Delo: ... know who you are, what you use, what you're about, that sort of thing.

Kyndra: I agree. Yeah, I really like Bob's Red Mill. I like their mission. I like their messages. I mean, they're a great company. Yeah, I do a lot with them, a couple of other companies, and then I also do recipe developing and food photography for Images Arizona. It's a magazine. I've been doing that for probably two and a half years now. They got me right at the beginning, which is awesome.

Delo: That's great.

Kyndra: Yeah, I love them too. But yeah, other than that, it's just basically the food blogging and the working for the different companies.

Delo: Okay.

Kyndra: Doing recipe developing.

Delo: And you do blogging for other publications too when they ask or-

Kyndra: Mm-hmm (affirmative). Yeah.

Delo: ... stuff like that?

Kyndra: I'll do it all. And then obviously, the visiting the restaurants and doing content creation for them is a [crosstalk 00:26:17].

Delo: Yeah, tell us a little bit about that. What's a day in the life of doing content creation for whatever, Joe's Restaurant?

Kyndra: Yeah, it's usually through email. I get an email. "Hey, do you want to partner with this restaurant, so and so?" "Sure. I'd love to." I go in. I bring my mom because she's my photographer.

Delo: Awesome.

Kyndra: We don't usually bring much more than just the camera, but then obviously, we take a look at the menu. We talk to the owner, whatever.

Delo: Do you pay your mom?

Kyndra: I'm not going to answer that.

Delo: That's cool.

Kyndra: We get a whole bunch of food. Obviously, I'm trained in the setting it up so it always looks really good and it's awesome though. And then we do the content creation, videos, pictures, all that, and yeah, then we leave.

Delo: Throw it out on your social media-

Kyndra: It's awesome.

Delo: ... and do all that stuff.

Kyndra: It's fun. It's a good time.

Delo: I can tell you really enjoy and love doing that.

Kyndra: I do. I really do and I think that's important with any job, is that you enjoy doing it so I'm happy.

Delo: Do you chat or have any relations with some of the other foodies around you or know them very well?

Kyndra: Well, I was telling you guys earlier, I don't really attend media events because I am such an introvert and by that time, 7:30, 8:00 at night, I'm usually already in my pajamas, gaming.

Delo: Yeah, right. That's so funny.

Kyndra: I do. I'm friends with a lot of them though and I've been to a couple of the Food Beast events around here and I met a lot of them and I mean, they're awesome. This food scene in Arizona is great.

Delo: Yeah, it is.

Kyndra: It's amazing.

Delo: It is. What are some of your... Have you been to Devour or some of these food and wine or-

Kyndra: Mm-hmm (affirmative). Mm-hmm (affirmative).

Delo: Do you enjoy going?

Kyndra: I do go to things like that. I'm not saying-

Delo: If it's during the day, you'll go.

Kyndra: ... I'm that much of a hermit. Yes, but those nighttime media events are hard for me to make sometimes.

Delo: Of course, because you're so old and it's-

Kyndra: I'm just getting so old.

Delo: ... beat. Yeah, I understand. Come talk to me in 20 years. No, that's awesome. Now, do you ever get requests from people wanting you to cook meals for them or-

Kyndra: Yeah, and I have done, what do they call it, meal prep?

Delo: Yeah.

Kyndra: I've done meal prep for a couple of people and I've actually thought about making a business out of it, but-

Delo: It's a lot.

Kyndra: ... it's a lot. And nowadays, like we were talking about people with all their food restrictions and things like that, I don't necessarily want to be responsible for-

Delo: Something else.

Kyndra: Yeah, and-

Delo: Yeah, because then you're working on a whole different level of business and-

Kyndra: Yeah, and like I said, I mean, my dream was always the cookbook, a food show. That's the direction I was going to, although I don't mind doing meal prep. It's actually really fun. It's not what I would want to make a business out of at this point.

Delo: It's tough to make a business out of something that there's a lot of people that have specific needs-

Kyndra: Yeah, exactly.

Delo: ... because then you're just having to change up or redo and-

Kyndra: Yes. Yeah, right. If I could do it all, the same meal, and just throw it out there, but people are always wanting different things, and so.

Delo: I think you have a good scale right now-

Kyndra: Thank you.

Delo: ... with what you're doing.

Kyndra: Thank you.

Delo: That's really, really cool.

Kyndra: I appreciate that.

Delo: Anything on just Arizona in general that you love, that you're seeing, that you want to be more part of?

Kyndra: I have said multiple times, Arizona's the best state. I never want to leave. It's great. I mean, the food scene, I feel is super up and coming, if not already here. I mean, I think it's a little bit behind San Fran and New York and those big places like that.

Delo: Still good company.

Kyndra: But I think that it's definitely on the rise. And I heard a fact the other day that 200 people are moving here every... I don't know if it was hour or day, but it was a huge [crosstalk 00:30:01].

Delo: It's a lot.

Kyndra: Yeah, there's a lot of people coming here and I think that's only going to, I mean, help the food scene, especially.

Delo: Oh, for sure.

Kyndra: Yeah.

Delo: Yeah, 100%. Well, I got a couple of questions I'm going to ask you that are just short questions and we'll see-

Kyndra: Okay, I'm ready. You're going to roast me.

Delo: ... what your response is. What would you prefer to do? Would you prefer to sit and meditate or just go for a really long walk?

Kyndra: That depends entirely on my mood, I think, because I have days where I need to get out, get some fresh air. I take the dog for a walk, which I really enjoy. And then I have days where I just need to calm the mind, sit and meditate, which I need to do more often, I'll admit. I think we all need to do that more often.

Delo: The focus aspect of everybody's life is huge.

Kyndra: Yes. Yes.

Delo: Yeah. Okay, that's a good answer. Netflix or the movie theater? I think I know this one.

Kyndra: Oh, Netflix.

Delo: Yeah.

Kyndra: You know I don't like to leave my house.

Delo: What's the last movie that you saw in the theater?

Kyndra: It was probably three months ago.

Delo: You haven't seen the Rise of Skywalker yet?

Kyndra: No.

Delo: And you're a hobbit nerd?

Kyndra: I am. See, I like Lord of the Rings and The Hobbit more than Star Wars, and I know you hate me for that.

Delo: No, no, no. I don't hate you for it but I went and saw The Hobbit within a month coming out.

Kyndra: I know, but look, I watched The Mandalorian and that was-

Delo: Okay, that's fair enough.

Kyndra: ... on my TV.

Delo: Touche.

Kyndra: Yeah.

Delo: Wine or coffee?

Kyndra: Wine. I'm not a big coffee drinker. I love it but I don't really do caffeine.

Delo: I got it. Okay.

Kyndra: I do love the taste of it though.

Delo: Yeah, it's in moderation like anything.

Kyndra: Mm-hmm (affirmative).

Delo: Would you rather go for a run or go for a swim?

Kyndra: Can you tell I'm really indecisive?

Delo: Yeah. I-

Kyndra: Probably a swim just because I have bad knees because I did cheer and dance and stuff and in school and I really screwed up my knees.

Delo: What high school did you go to?

Kyndra: Saguaro, right down the street.

Delo: Okay. Yeah, right down the road.

Kyndra: Yeah.

Delo: Cool.

Kyndra: Yeah, so I would probably have to say swim.

Delo: You'd do swim.

Kyndra: I do love swimming and plus we live in the perfect state for it.

Delo: And so, now you do just a lot of yoga, dog walking-

Kyndra: Yes.

Delo: ... and just stuff like that?

Kyndra: Yoga is my main source of exercise now.

Delo: Very cool. Yeah. Peloton?

Kyndra: No.

Delo: No, you haven't got on that train yet?

Kyndra: I'm not on that train.

Delo: Would you rather spend your day gardening or building sandcastles?

Kyndra: These are hard questions.

Delo: Don't worry about. They're going to be recorded forever-

Kyndra: Oh my goodness.

Delo: ... so whatever you say, I'm going to...

Kyndra: See, I do love the beach.

Delo: It's a pretty damn good question though, right?

Kyndra: Yes.

Delo: I don't know how I came up with that, but-

Kyndra: I do love the beach.

Delo: You can love both. It's not a big deal.

Kyndra: Can I pick both?

Delo: You can pick both, yeah.

Kyndra: Okay.

Delo: Do you have a garden?

Kyndra: Yes, I do a little bit of gardening. I do a lot of herbs, kale and tomatoes are my main... They're easy to do.

Delo: Yeah, a three year old can grow those. Good job.

Kyndra: Exactly.

Delo: Yeah. No, I'm just teasing. That's awesome. Okay, this is selfishly, my question. What band have you heard of, Winger or Ratt?

Kyndra: What if I said neither?

Delo: That's okay. I know what I'm dealing with now.

Kyndra: Look, I know Aerosmith.

Delo: Okay, good.

Kyndra: You know that.

Delo: All right. We got Aerosmith.

Kyndra: (Singing).

Delo: See, I got the Sméagol out of you. Okay, so you don't know Winger or Ratt, but that's okay.

Kyndra: I'm sorry.

Delo: That's that's my old ass, 80s hair metal stuff-

Kyndra: Yeah, I'm really sorry.

Delo: ... but I knew that was going to be a no.

Kyndra: I'll look them up when I get home though.

Delo: Please do. I think you're really going to love Winger.

Kyndra: Winger?

Delo: Yeah.

Kyndra: Like...?

Delo: Yeah. Yeah. Look it up.

Kyndra: All right.

Delo: And then really, the last question, why is Lord of the Rings so important to you? Is it the escapism? Is there some analogy that's in there that you can relate to because you game or why is it so important to you?

Kyndra: It's not about the gaming.

Delo: Okay.

Kyndra: I wish it was, but it's not. It's more about... Hobbits are all about spending quality time with friends, family, around great food, which is pretty much how I want my life to be.

Delo: That's a great answer.

Kyndra: And so, that's... I mean, I saw it in theaters in 2001. I am a huge fan. I read all the books. I just think that it's a classic that everyone should see and everyone should take the message behind it and-

Delo: Yeah, you get that feeling when you watch it of-

Kyndra: Yeah, it's comforting.

Delo: ... community and yeah, it's comforting.

Kyndra: Oh, yeah. It's definitely comforting for me. I probably watch Lord of the Rings: Fellowship of the Ring once a week.

Delo: Wow.

Kyndra: And that's a three hour movie.

Delo: That's Rocky Balboa for a lot of these guys that work out.

Kyndra: Yes,

Delo: You're like, "Lord of the Rings, now it's time to cook! Sméagol up!"

Kyndra: Yes, exactly.

Delo: That's bad ass.

Kyndra: It's obviously just a comforting thing for me so if I'm feeling overwhelmed or whatever, I'll just throw Lord of the Rings on and I get this sense of relief.

Delo: I bet nobody's asked you this question either, huh?

Kyndra: No, it was a great question.

Delo: It's just cool-

Kyndra: Good job!

Delo: ... because I get it and I love that.

Kyndra: Yeah, I get it.

Delo: Well, this was awesome. I'm really happy to have you. I'm happy to hopefully, do some collaborations stuff with you-

Kyndra: Yeah, I'd love to.

Delo: ... especially wit the Healthy Hospitality and getting your input on some things that we can do together to bring that 10%, that hopefully, grows into 20 to 30 of health and wellness in a workspace-
